Smart Food Service team were invited by Mill St. Brewery and SSP North America to create a casual dining concept in Canada’s busiest Airport, Toronto Pearson. With this high-volume facility, transaction times were critical. Smart created an operationally efficient kitchen and bar layout to ensure speed of service. The creation of a feature keg cooler, large double-sided bar with signature beer pouring station allowed the operator to highlight the Mill St. product and drive sales. Smart worked closely with the ownership group to take this project from concept through to opening.
